300 g red chili peppers
1 teaspoon cumin seeds

Cut off the green part of the chili peppers and slice them in half.
Place the chili peppers in a pot with water. Bring to a boil and let simmer for 15 minutes.
Crush the cumin seeds into powder in a mortar.
Drain the chili peppers.
Add the white wine vinegar and olive oil.
Peel the garlic and press it into the chili peppers.
Add the cumin powder and a pinch of salt.
Put the chili pepper mixture with the sugar in a food processor and chop finely. Season to taste if necessary.
Put the harissa in a glass jar. Pour a layer of olive oil over the harissa and seal it.
