Ingredients

What do you need?

Quantity: 4P

400 g meat per person
Chipotle mayo
Salt and vinegar fries
Onions & beets, pickles … in vinegar

Endive and celeriac salad:
¼ of a large celeriac
3 endive heads
1 onion
2 tbsp fresh mayonnaise
extra tbsp mustard
Pepper and salt

Parmesan and anchovy salad:
4 little gem lettuces (or lettuce of choice)
3 anchovy fillets
1 tbsp strong mustard
250 ml corn oil
Black pepper from the mill
1 tbsp vinegar
1 spring onion
100 g parmesan in block
1 tsp honey

Preparation method

How do you make this?

Meat: Make small burgers from the Limousin minced meat and roll the sides in dried chives.

You can push the picanha into crushed pepper on one side.

Roll the merguez into smaller sausages.

Cut the entrecôte and herring in half and into thick strips.

White pudding in slices.

Arrange everything nicely on a platter.

Endive-celeriac salad: Put 2 tbsp mayonnaise with a teaspoon of mustard and 2 tbsp water in a bowl and stir together.

Slice the celeriac into fine slices and then into fine strips and add.

Finely chop the endive and onion and mix everything together.

Parmesan and anchovy salad: Put all the ingredients, except the lettuce, and half of the parmesan in a tall measuring cup.

Insert the hand blender and blend everything finely.

Slice the lettuces and lay them open on a plate.

Drizzle the vinaigrette over and grate the rest of the cheese on top.

Also think of any vegetarians at the table: marinated tofu, plant-based sausages, veggie burgers, mushrooms…
