1 frisée lettuce, washed
2 tomatoes
4 hard-boiled eggs, peeled
350 g blue cheese (Achelse blue or gorgonzola)
400 g bacon bits, cut into strips
250 g green beans, cooked al dente

DRESSING
2 tablespoons honey
4 tablespoons red wine vinegar
8 tablespoons peanut oil
1 red onion, finely chopped
pepper and salt

Preparation method

How do you make this?

Tear the lettuce into pieces of 4 to 5 centimeters and distribute over the plates.

Cut the tomatoes into pieces and place them alongside. Distribute the green beans over it. Cut the eggs in half and arrange them around.

Put the bacon bits and the red onion with a knob of butter in a pan and fry until crispy. Place on a paper towel and drain the fat.

Deglaze the pan with vinegar and stir in the honey and oil.

Scoop the bacon bits back into the pan and fry for just a moment longer.

Distribute the cheese and bacon bits over the plates.

Tips

Are you not a fan of blue cheese? Then you can also choose a softer cheese such as goat cheese or cheddar. Baked figs would also fit well with this (if they are in the season).
