a knob of butter
1 large sweet onion
1 tsp sherry vinegar
salt and pepper
1 jar of sour cream
a splash of milk
500 g floury potatoes

1 tsp sherry vinegar

1 jar of sour cream
a splash of milk
Scrub the potatoes clean and steam them in their skins.
Peel the onion and chop finely. Sauté gently in light-colored butter and deglaze with a splash of vinegar.
Reduce the heat and let it color for about 5 minutes with a lid on. Add a splash of water if it gets too dry.
Peel the potatoes.
Add 2 tbsp of sour cream to the onions, mix and pour into the food processor.
Add the peeled potatoes in pieces and blend until smooth, so you can pipe dots with it. Add a splash of milk if necessary.
Put the potato cream in a piping bag and keep warm.
Refresh your hands with half a lemon and dry them with a cloth.
Pipe a dot in line with your thumb.
