For the falafel:
400 g chickpeas (drained and rinsed)
20 g parsley
20 g coriander
1 tsp cornstarch
1 tsp baking powder
1 tsp ground cumin
1 tsp coriander powder
1 tbsp olive oil
1 clove garlic
1 tsp cinnamon
1 chili pepper (optional, finely chopped)
A pinch of salt

For the salad:
3 tomatoes
1 cucumber
1 bunch of parsley
1 red onion
Pepper and salt

For the tahini-garlic sauce:
120 g tahini
2 cloves of garlic (pressed)
1 tsp salt
Juice of 1 lime
80 ml water
4 Lebanese wraps (or to taste)

Preparation method

How do you make this?

Making falafel: Place all the ingredients for the falafels in a food processor and blend until a fine mixture. Spread the falafel mixture evenly on the wraps. Heat some oil in a frying pan and place the wraps with the chickpea side down in the pan. Cook for about 5 minutes until golden brown and crispy. Also fry the bottom briefly.

Preparing the salad: Chop the tomatoes, cucumber, red onion, and parsley finely. Mix everything in a bowl and season with pepper and salt.

Making tahini-garlic sauce: In a bowl, whisk together the tahini, garlic, salt, lime juice, and water until a creamy sauce forms. Add extra water if needed for the desired consistency.

Filling the wraps: Top the fried wraps with the salad. Generously drizzle with the tahini-garlic sauce. Roll up the wraps or serve them unfolded.

Serving: Serve immediately while they are warm and crispy.
