What do you need?
Quantity: 4P

1 cauliflower
1 tsp turmeric
Juice of 0.5 lemon
8 wraps of your choice
1 can of black beans, drained and rinsed
1 large red onion, sliced
4 bell peppers (different colors), sliced

Fajita spice oil:
1 tsp smoked paprika
1 tsp garlic powder
1 tsp cumin powder
Juice and zest of 1 lime
1 tbsp honey
4 tbsp olive oil
1 tsp chili flakes

Toppings:
Sour cream
2 limes, cut into wedges
1 avocado, sliced
1 bunch of cilantro, chopped

Preparation method

How do you make this?

Preparation: Preheat the oven to 200°C.

Cauliflower: Mix the turmeric with the lemon juice.

Cut the cauliflower into florets. Spread the turmeric-lemon mixture over the cauliflower florets and toss well to coat evenly.

Steam the cauliflower until the florets are tender.

Traybake: Evenly distribute the cauliflower florets, bell peppers, red onion, and black beans on a baking sheet lined with parchment paper.

Herb glaze: In a bowl, mix the smoked paprika, garlic powder, cumin powder, lime juice and zest, honey, olive oil, and chili flakes. Generously brush the vegetables and beans with this glaze.

Oven: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the vegetables are tender and lightly caramelized.

Serving: Briefly warm the wraps in the oven or in a dry pan. Serve the roasted vegetables in the wraps and finish with sour cream, avocado, cilantro, and a squeeze of lime juice. Optionally, add some hot sauce for extra heat.
