What do you need?
Quantity:

500 g salsify
Bowl with cold water
Juice of 1 lemon

For breading:

2 eggs beaten with a pinch of salt
1 bowl of flour
1 bowl of breadcrumbs

For the dip:

0.5 cauliflower cut into florets
2 tbsp olive oil
Salt and pepper
1 tsp garlic powder
200 g fresh cream cheese
Optional splash of water

For the dip:

0.5 cauliflower cut into florets

Preparation method

How do you make this?

Rinse most of the dirt off the salsify.

Peel them thoroughly until they are nice and white.

Place them in the bowl of cold water with the lemon juice.

Cut them into sticks of 7 to 8 cm and cook or steam them for 5 minutes until slightly al dente.

Dry them well, wrap them in flour, then in the eggs, and lastly in the breadcrumbs.

Fry them for 20 minutes at 170°C in the Airfryer.

Dip:

Mix the cauliflower florets with the herbs and oil.

Place in the Airfryer and bake for 20 minutes at 190°C.

Let cool slightly and blend into a smooth dip.

Serve in a bowl with the croquettes.
