Caramelizing onions: Slice the onion into thin rings and sauté them over low heat in 1 tablespoon of olive oil. Stir regularly until they are deep brown and caramelized. This takes about 20-25 minutes.
Cooking pasta: Cook the pasta according to the package instructions.
Sautéing mushrooms: Tear the oyster mushrooms into strips. Add another tablespoon of olive oil to the pan with the onion and sauté the mushrooms until golden brown.
Seasoning & sauce: Stir the tomato paste and smoked paprika powder into the mushrooms and sauté briefly. Then add the heavy cream and most of the Pecorino.
Combining: Mix the cooked pasta and crispy chili oil into the sauce. Stir well and serve immediately.
Finishing: Finish with extra Pecorino and chili oil to taste.
Tips
Patience with caramelization! The longer you let the onion bake, the sweeter and more intense the taste. You can also use other mushrooms, such as chestnut mushrooms or shiitake. Do you like extra spice? Add another pinch of chili flakes. No Pecorino at home? Parmesan also works perfectly!
