200 g bowtie pasta cooked al dente (farfalle)
2 tbsp olive oil
0.5 onion finely chopped
1 small zucchini
1 red & 1 yellow bell pepper
1 thick carrot
200 g green asparagus
Pepper and salt
0.5 finely chopped basil
150 g mozzarella cut into small cubes

Parmesan sauce

2 tbsp olive oil
2 cloves garlic
1 tbsp mustard
100 g Parmesan cheese in cubes
0.5 bunch basil
Juice of 0.5 lemon
1 tbsp yogurt
Pepper and salt

Preparation method

How do you make this?

Cook the pasta al dente as indicated on the package.

Rinse well with cold water, drain, and place in a large bowl.

Clean the vegetables and cut them into small pieces.

First, sauté your onion and carrot in the oil, cooking for 3 minutes.

Add the rest of the vegetables and sauté briefly and vigorously.

The vegetables should remain nice and crispy.

Season with pepper and salt and add to the pasta.

Put all the ingredients for the sauce in a tall measuring cup and blend finely with an immersion blender.

Add some water if it is too thick.

Mix into the pasta and fold in the mozzarella cubes, finishing with basil.

Serve immediately or store in the refrigerator.

Can be served lukewarm or cold.
