Choron sauce is a tomato-based béarnaise sauce. Very tasty with meat, but also great on grilled vegetables or with fried fish.
Fresh béarnaise sauce
2 large tomatoes
1 tbsp tomato paste
1 shallot

Peel the shallot and chop finely. Blanch the tomatoes: Cut the tomato into quarters, remove the flesh (put it in salad or soup) and cut the tomato into cubes.
Let the knob of butter melt in a saucepan and sauté the shallot until soft, add the tomato cubes, set aside about a tablespoon for later, and stir in the tomato paste vigorously. Season with pepper and salt. Let simmer for a few minutes. Add this mixture and the raw tomato cubes to the béarnaise sauce, whisk well and serve immediately.
