Choronsaus is een klassieke variant op de bekende béarnaisesaus. Het basisrecept van de béarnaise (een warme, geëmulgeerde saus op basis van kllaarde boter, eidoorders en tarragon/kruiden) blijft helemaal hetzelfde, maar er wordt een hartige tomatencompote of tomatenconcentraat aan toegevoegd. Dat geeft de saus een prachtige oranjerode kleur en een heerlijk frisse, lichte toets!

Waarbij serveer je deze getomateerde saus het beste?

Deze rijke bearnaise met tomaat is gigantisch veelzijdig! Hij is een absolute klassieker bij rood vlees zoals filet pur, entrecote of een sappige rosbief. Maar pas op: probeer hem ook zeker eens bij een mooi stukje gebakken witvis, zalm of over knapperige gegrilde groenten uit de oven of van de BBQ. Succes gegarandeerd!

Choron sauce is a tomato-based béarnaise sauce. Very tasty with meat, but also great on grilled vegetables or with fried fish.

Fresh béarnaise sauce
2 large tomatoes
1 tbsp tomato paste
1 shallot
Pepper from the mill
Fleur de sel
1 knob of butter

Peel the shallot and chop finely. Blanch the tomatoes: Cut the tomato into quarters, remove the flesh (put it in salad or soup) and cut the tomato into cubes.

Let the knob of butter melt in a saucepan and sauté the shallot until soft, add the tomato cubes, set aside about a tablespoon for later, and stir in the tomato paste vigorously. Season with pepper and salt. Let simmer for a few minutes. Add this mixture and the raw tomato cubes to the béarnaise sauce, whisk well and serve immediately.
