1.5 l chicken broth (click here for the broth recipe)
250 g shiitake
1 tbsp ginger, grated
250 g shelled edamame beans (green soybeans)
1 zucchini
0.5 bunch mint
1 tbsp sesame oil

Preparation method

How do you make this?

Gently bring the chicken broth to a boil.

Meanwhile, slice the shiitake and add them to the broth along with the beans and ginger. Let it simmer for 1 minute.

Make noodles from the zucchini using a spiralizer or a mandoline. Or slice thin strips with a vegetable peeler.

Add and let it cook for another 1 minute.

Serve in bowls.

Finish with finely chopped mint and a few drops of sesame oil.

Tips

I always have lemongrass in my freezer. I grate that about it à la minute. Sesame seeds, coriander and Chile are also very welcome here.
