Oven dish of skrei with roasted grapes and pumpkin

Skrei is such a fish that needs little to shine. In this casserole, I combine it with sweet roasted grapes and pumpkin, a bit of thyme, good olive oil, and that's it. Everything goes into the oven together, without fuss. Light, comforting, and perfect for a weekday evening that deserves a little something extra.

Preparation method

How do you make this?

Cut the pumpkin into wedges and scrape out the seeds.

Cut the bunch of grapes into small clusters and arrange them in a large baking dish with the pumpkin.

Drizzle with olive oil, season with pepper and salt, and roast for 20 min at 200°.

Remove the dish from the oven and arrange the pieces of skrei in between. Add the thyme.

Generously pour the juices that have come out over the skrei.

Put back in the oven for another 12 min.

Tips

Outside the skrei season, you can also opt for cod as an alternative.
