2 kohlrabis
500 g carrots
1 onion
1 apple
olive oil
1 litre chicken broth
4 eggs (at room temperature)
vinegar
1 little gem lettuce
20 slices smoked
duck breast
sesame seeds
pepper and Maldon sea salt

Preparation method

How do you make this?

Remove the top and bottom parts of the kohlrabis, but you don't need to peel them. Peel the carrots and the apple. Peel the onion. Cut everything into pieces and sauté for 2 to 3 minutes in olive oil.

Add the chicken broth so that the vegetables are submerged. Bring to a boil until the vegetables are tender.

Blend the soup and season with pepper and salt.

Poach the eggs. Bring water just to a boil with a generous splash of vinegar. Crack the eggs into a cup and gently slide them one by one into the water. Let them poach for about 3 minutes. Pat them dry.

Finely chop the head of lettuce. Finish the soup with the lettuce, duck breast, and poached egg. Drizzle with sesame seeds and olive oil.

Tips

Poaching eggs will succeed without a problem if you use farm-fresh farm eggs.
