Mix the salt into the flour, make a well in it, and pour in the honey.
Crumble the yeast over the flour.
Pour in the ice water and let the dough knead in a food processor with a kneading hook. Start with 4 minutes on the lowest setting and then 5 minutes on medium speed.
If you don't have a food processor, knead by hand for at least 10 minutes until you have an elastic dough. The ice cubes will slowly melt.
Cut the dough in half and shape each half into a ball. Now, like a real baker, press the palm of your hand in the center of the dough and pull the edges around inward until you have a ball. Turn it over: now you have a nice smooth surface on top without 'wrinkles' or imperfections, which are hidden underneath.
Place the dough immediately on the baking sheet and seal it hermetically with plastic wrap to prevent the crust from cracking during baking.
Put it in a warm place, near the oven or radiator – the dough should double in size.

Preheat the oven to 260 °C.
Remove the foil and slide the baking sheet into the oven.
Pour a large glass of water (200 ml) onto the bottom of the oven for a big cloud of steam, and close the door immediately.
Lower the temperature to 200 °C and bake for 10 minutes.
Bake for another 20 minutes at 175 °C.
Remove the bread from the oven and tap on the crust: if the bread sounds hollow, it is done.
Tips
Bread needs time and cannot be rushed. Start it in the morning, it has to rise for 3 hours. Do you prefer to eat white bread? In the recipe, replace the whole -grain flower with white flour. Are you in a hurry and don't you have 3 hours to wait until the bread has risen? Then put it in the oven for a quick rise for half an hour, at 30 to 35 ° C. Increase the temperature to 175 ° C and let the bread bake for another 30 minutes, from the moment the oven reached 175 ° C. If you only have a small family, fry two small loaves and put one of them in the freezer, so you can enjoy your own "fresh" bread for a week. A sandwich that you bake yourself can be completely to your hand. Pimp on it with extra sunflower seeds, pumpkin seeds, linseed, nuts or raisins. For a large brown bread, count on about 3 tablespoons.
