Grate the zucchinis on a box grater into a bowl, sprinkle with a teaspoon of salt, mix, and let rest for 5 minutes.
Melt the knob of butter in a large pan, let the sliced garlic color slightly, set aside.
In the same pan, let the spinach wilt, stir in the cooked garlic at the end and season with pepper, salt, and nutmeg. If there's too much moisture, let it drain in a colander.
Put the spinach and crumbled feta in a bowl, squeeze the water out of the zucchini well and add it, season the mixture with pepper, salt, and nutmeg. Then mix in the egg white, the chopped cooked chicken, and half of the pistachios.
If you want to use minced meat, cook it first.
Place a sheet of filo dough on a board or tray, brush with butter.
Place a horizontal band of filling on the dough and roll it up like a sausage.
Cut in half and place the filled rolls on a baking paper that fits in the pizza accessory of the Airfryer.
Continue with the rest of the filling and sheets, lay them nicely next to each other and mix the leftover butter with the yolk.
Brush the entire thing with this yolk mixture, sprinkle with the remaining pistachios, and tuck the thyme sprigs in between.
Place the vegetable pie on the pizza accessory in the Airfryer and bake for 20-25 minutes at 150°C.
Let it cool slightly and slide the börek onto a board to cut and, of course, to eat!
