1x Hollandaise sauce
1 bunch of fresh tarragon
100 ml white wine vinegar
1x Hollandaise sauce
1 bunch of fresh tarragon
100 ml white wine vinegar
Pluck the tarragon leaves from the stiff stems, place them in a jar and pour vinegar over them, pushing the tarragon down well.
Prepare the Hollandaise sauce. Lightly squeeze the tarragon leaves, chop them finely and stir them into the Hollandaise sauce. Taste and season with extra pepper and salt if necessary. Keep the sauce warm in a bain-marie.
