What do you need?

1 kg nicely marbled beef stew (chuck), at room temperature
2 tbsp butter
1 large onion
2 slices of gingerbread
2 tbsp mustard
Pepper and salt
1 heaping tablespoon of flour
2 bottles of brown Pied de boeuf
250 ml veal stock
Thyme & Bay leaf
Salsify in béchamel sauce
Fresh fries
Fresh mayonnaise for the fries

2 tbsp mustard
Pepper and salt
1 heaping tablespoon of flour
2 bottles of brown Pied de boeuf
250 ml veal stock
Thyme & Bay leaf
Salsify in béchamel sauce
Fresh fries
Fresh mayonnaise for the fries

Preparation method

How do you make this?

Cut the meat into even pieces.

Melt a tablespoon of butter and brown the meat, in batches, until nicely browned on all sides. Add the onion and let it sauté for a moment.

Add the meat back together with the flour and stir well.

Deglaze with beer and stock, add the gingerbread with mustard, thyme, and bay leaf. Season with pepper and salt, and let simmer for 45 minutes.

Meanwhile, prepare the fries and the salsify in béchamel sauce.

Taste and season if necessary.

Serve with the fries, the salsify, and optionally a dollop of mayo.

Tips

Use well -marbled stew for more taste. Cut the meat into even, not too large pieces for an even cooking time.
