Ingredients

What do you need?
Quantity: 4P - 8 bao buns

For the pulled mushrooms
250 g king oyster mushrooms
250 g oyster mushrooms
1 tbsp sesame oil
1 tbsp soy sauce
2 tbsp hoisin sauce
1 tsp smoked paprika powder
1 clove of garlic, finely chopped
1 tsp rice vinegar
Salt and pepper to taste

For the quick red cabbage pickle
1/4 red cabbage, very finely chopped
1 red onion, super finely sliced
2 tbsp rice vinegar
1 tsp honey or agave syrup
pinch of salt

For the sauce
3 tbsp mayonnaise
1 tbsp gochujang
Juice and zest of 1/2 lime

Other
8 bao buns (ready-made or homemade)
Fresh coriander, spring onion and sesame seeds for garnish
Optional: roasted peanuts or fried onions

Preparation method

How do you make this?

Preparing pulled mushroomsΒ 

  • Tear the mushrooms into strips by hand.
  • Mix with sesame oil, garlic, soy sauce, hoisin sauce, smoked paprika powder and rice vinegar.
  • Remove the rack from the small basket of the Philips Airfryer Dual Basket with steam function and divide the mixture in it.
  • Set to 180Β°C for 20 minutes, stirring halfway through.

How to make red cabbage pickleΒ 

  • Mix the red cabbage and red onion with rice vinegar, honey and a pinch of salt.
  • Marinate for at least 15 minutes for a fresh, crispy pickle.

How to prepare gochujang sauceΒ 

  • Mix mayonnaise, gochujang, lime juice and zest until smooth.

4. Steaming bao bunsΒ 

  • Place the bao buns in the large basket of the Philips Airfryer Dual Basket with steam function.
  • Select the steam function and set it to 10 minutes.
  • Use the sync function so that buns and mushrooms are ready at the same time.

Filling & finishing baosΒ 

  • Fill the warm baos with a generous spoonful of pulled mushrooms.
  • Add a portion of red cabbage pickle.
  • Spoon some of the gochujang sauce over it.
  • Finish with coriander, spring onion, sesame seeds and possibly roasted peanuts or fried onions for extra crunch.

Tips

For extra crunch: sprinkle with roasted peanuts or fried onions. Also delicious with a little sriracha if you like it extra spicy.
