1kg asparagus
8 slices of ham
4 hard-boiled eggs
1 green lettuce, washed

Dressing:
4 tbsp Greek yogurt
2 tbsp fresh mayonnaise
2 tbsp finely chopped tarragon
pepper and salt

Preparation method

How do you make this?

Peel the asparagus, cut off the bottom, and cook them al dente in salted water for 5 minutes.

Place them on some kitchen paper and let cool.

Push the eggs through a sieve or chop finely.

Mix all the ingredients for the dressing together.

Cover a large plate with lettuce.

Distribute the asparagus over the 8 slices of ham, roll them up, and place them on the lettuce.

Sprinkle the eggs over them and finish with the dressing.

Tips

Save the peels to make delicious asparagus soup.
