5 Granny Smith apples
5 Jonagold apples
80 g sugar
40 g cold butter
1 vanilla pod (optional)

200 g flour
100 g butter
Pinch of salt
1 tbsp sugar

Preparation method

How do you make this?

Preheat the oven to 200°C. For the dough, put everything in a food processor (not a blender) except for the egg and process until you get a sandy mixture. This can also be done by hand in a bowl. Add the egg and process briefly until everything comes together, then press everything into a flat round piece of dough. Wrap in foil and chill for 1 hour in the refrigerator.

Put the fine sugar, vanilla seeds, and scraped pod in a saucepan and let caramelize, stirring well, remove the pod and pour into your baking dish.

Peel the Granny Smith apples, cut them into quarters, remove the core, and place them closely together in a flower shape on the caramel in the baking dish. Peel the Jonagold apples, remove the core, cut into smaller pieces, and place them on top of the others, pressing down a bit.

Roll out the dough with some flour to the size of your baking dish and place it on top. The dough can slightly overhang the edge, cut a cross in the dough so that steam can escape. Bake for 45 minutes at 200°C with the low steam function on.

Let cool slightly, place a flat plate on the cake and turn it over. Tap gently on top to ensure everything comes loose. You can also definitely make this cake with ready-made puff pastry if you want less work. Sprinkle some powdered sugar over it and decorate. Serve slightly warm.
