Delicious appetizer of toasted bread with roquefort cheese and homemade apricot compote. A contrast between sweet and savory!
4 apricots 1 tbsp sugar A few drops of lemon 1 tsp olive oil 4 slices of sourdough or nut bread 100 g roquefort A sprig of chervil for garnish
4 apricots 1 tbsp sugar A few drops of lemon 1 tsp olive oil 4 slices of sourdough or nut bread 100 g roquefort A sprig of chervil for garnish
Let the apricots simmer with the sugar, lemon, and olive oil for five minutes and mash into a compote.
Toast the slices of bread.
Top them with the roquefort and then add some compote on top.
Cut into bite-sized pieces and garnish with a leaf of chervil.
You can replace the apricot compote with a different sweet spread, such as fig figure or a spicy chutney, for a different flavor combination.
