Sear or grill the piece of tuna for two minutes on each side in a bit of olive oil and season with pepper and salt. Then cut it into small cubes.
Wash the lettuce leaves thoroughly, chop them finely, and place them at the bottom of the glasses.
Mix the lemon juice, mayonnaise, mustard, and soy sauce. Mash the egg.
Cut the veal fillet into small slices and the anchovy fillet into strips.
Fill the glasses with a few pieces of tuna and veal fillet, some egg, and a few strips of anchovy.
Top with a teaspoon of the mayo mixture, a few breadcrumbs, a caper, and a sprig of cress.
Tips
Be creative with leftovers! Do you have some bacon, steak or cooked vegetables left? Cut them into small pieces and also fill glasses with it for a unique variation. You can also easily expand this dish with more toppings such as a slice of radish or a little grated Parmesan cheese for extra taste.
