Goat cheese roll:
2 fresh goat cheeses
1 bunch of basil
2 handfuls of pistachios
2 spring onions
1 teaspoon freshly ground black pepper

Crackers with Green Seeds:
80 g spinach
80 g watercress
250 ml water
50 g chia seeds
1.5 cups mixed seeds (chia seeds, ground flaxseed, sesame seeds, sunflower seeds, pumpkin seeds)
1 tablespoon dried rosemary
1 tablespoon dried tarragon
1 teaspoon paprika powder
1 teaspoon chili flakes
1 teaspoon salt

Preparation method

How do you make this?

Crackers with Green Seeds: Blend the spinach and watercress with the water until you have a smooth smoothie.

Mix the seeds and herbs into the spinach smoothie.

Spread the mixture in a thin layer between two sheets of baking paper, remove the top sheet, and bake for 60 minutes in a preheated oven at 120°C. Flip after 40 minutes and continue baking until crispy.

Goat cheese roll: Blend the goat cheese with half of the finely chopped basil, pistachios, spring onions, and black pepper in a food processor until creamy.

Shape the mixture into a compact roll and let it firm up in the refrigerator.

Roll the goat cheese roll in the remaining basil for a nice green crust.

Serve with the crackers with green seeds and enjoy!
