8 large tortilla wraps

Köfte mixture:
400 g beef
400 g lamb
80 g breadcrumbs
1 tbsp pine nuts, roughly chopped
2 tbsp finely chopped parsley
1 tbsp finely chopped mint leaves
2 cloves garlic, grated
1 red onion, finely chopped
1 tsp allspice powder
1 tsp cinnamon
¼ nutmeg, grated
1 tbsp paprika powder

White coleslaw:
¼ white cabbage, very finely chopped
2 tsp salt
125 ml cider vinegar
80 g sugar
1 tsp crushed cumin seeds
1 tsp turmeric

Yogurt sauce with pickled lemon and garlic:
250 g yogurt
1 clove garlic
35 g flesh of a pickled lemon
0.5 tsp salt
2 tbsp olive oil

Finishing:
2 handfuls of coriander
2 handfuls of flat-leaf parsley
2 handfuls of mint

Preparation method

How do you make this?

Combine the cider vinegar, sugar, cumin seeds, turmeric, and salt in a bowl. Mix in the finely chopped white cabbage and let it sit for an hour.

Take a pickled lemon, remove the peel, and keep only the flesh. Place the flesh in a measuring cup with yogurt, garlic, salt, and olive oil. Blend everything together until smooth.

Mix all the ingredients for the meat in a bowl. Knead everything well. Once everything is well mixed, shape them into flat oval burgers.

Fry the burgers.

Set everything on the table.

Warm the tortillas as indicated on the package.

Spread the entire tortilla with garlic sauce, add a line of harissa. Place the köfte in the center with the white cabbage and fresh herbs on top. Roll the tortilla up with aluminum foil.

Tip: many Mediterranean ingredients are available online or in specialty grocery stores. You can replace the pickled lemon with 1 tsp of lemon zest if desired.
