Making salted caramel
Place the caster sugar in a saucepan over medium heat, without adding any water.
Allow to melt gently, stirring occasionally to dissolve any lumps.
Once the sugar has completely melted, add the butter and continue stirring until everything is well combined.
Remove the pan from the heat and carefully add the cream – watch out for splashes!
Add a pinch of salt and, if desired, some vanilla extract.
Pour the salted caramel into a clean jar and let it cool completely.
Making Iced Salted Caramel Coffee
Decorate the inside of a tall glass with drizzles of salted caramel.
Fill the glass with ice cubes and pour in the cold milk.
Make a fresh shot of espresso and mix in a teaspoon of salted caramel. Carefully pour the espresso over the milk layer for a nice layering.
Serve immediately with a straw.
Tips
Use plant-based milk, cream and butter for a completely vegan version. Add a dollop of whipped cream or a pinch of cinnamon for extra indulgence. The caramel sauce is also delicious on pancakes or ice cream.
