The 4 basic knives
In hotel school, I learned what the 4 basic knives are. Each knife has its own task, almost its own character.
- Utility knife: very versatile and ideal for slicing and chopping vegetables, for example. It is the kind of knife you take out of the drawer for almost everything.
- Paring knife: this is your precision knife for all the fine work: peeling fruit and vegetables, cleaning strawberries, chopping garlic… Super lightweight and handy for working neatly, without any fuss.
- Chef's knife : this is quite a bit bigger, heavier, and hey, also sturdier. Ideal for hearty tubers or even for cutting through lobster.
- Fillet knife (slicing): a long, narrow knife with a slightly flexible blade that lives up to its name: it is perfect for filleting fish and cutting thin fillets.
These basic knives are the best friends of chefs and home cooks alike.
Commonly used types of knives
So you start with the 4 basic knives, but the better your skills become, the more extensive your knife collection gets. Which types of knives are still popular and what are they used for?
- Santoku: these Japanese knives have a Shorter and slightly straighter blade. Handy for vegetables, fish, and thin slicing. Less suitable for chopping hard products.
- Bread knife: a serrated bread knife is a must-have for everything baked: from bread (duh) to biscuits. If you cut puff pastry with a regular knife, for example, you tear the layers apart.
- Steak knife: oh, eating steak is truly pure luxury; with your steak knife, you cut through your piece of meat as if it were butter.

But folks, I cannot emphasize this enough: take good care of your knives! Handle them with respect, because they are an extension of your hand. We learned that on day one at hotel school.

- Use kitchen knives only for what they are really intended for. So not to tap butter off the edge of your pan or to open a can.
