125 g wheat flour
125 g buckwheat flour (or just wheat flour)
400 ml lukewarm milk
1 egg
10 g dry yeast
2 tbsp liquid honey
1 pinch of salt
1 tbsp butter for frying
Powdered sugar

Preparation method

How do you make this?

Mix the yeast into the milk, let it sit for 5 minutes.

Put the flour in a bowl with the salt on the side.

Make a well in the center of the flour and pour some of the milk into it.

Start stirring from the center to make a batter, gradually adding more milk to create a nice smooth dough, add the egg and honey and whisk everything well together.

If you have lumps, use an immersion blender.

Let the batter rest for an hour in a warm place.

Stir the dough loose and put it in a squeeze bottle.

Heat the poffertjes pan, grease each hole with some butter, fill each slightly more than halfway and bake until the bottom is light brown, using a wooden skewer turn each poffertje over and let it color briefly.

Serve warm with powdered sugar and optionally a knob of butter.
