2 bell peppers (yellow red)
1 eggplant
150 g red beans (jar or can, drained)
150 g chickpeas (jar or can, drained)
1 chili pepper
1 tsp cinnamon
1 tsp dried oregano
1 tsp cumin seeds
1 tsp fennel seeds
150 g corn
500 g tomato coulis
pepper
pinch of salt
Couscous:
200 g whole grain couscous (whole wheat semolina)
1 tbsp olive oil
1 shallot
1 sprig of thyme
1 tsp turmeric
400 ml boiling water
Garnish:
150 g (low-fat) sour cream
1 bunch of coriander
0.5 bunch of fresh mint
