What do you need?

Quantity:

Soup:
a good chunk of butter
2 sweet onions
3 chicory heads
1/4 green chicory
1 l chicken broth
splash of cream

Garnish:
2 slices of whole grain bread
300 g mixed minced meat
1 tbsp butter
2 tbsp olive oil
salt and pepper
100 g feta cheese
2 containers of garden cress

Preparation method

How do you make this?

Soup: Melt the butter. Finely chop the onion and sauté.

Finely chop the chicory, add it to the onion and sauté together.

Finely chop the green chicory and sauté together. Deglaze with broth.

Let simmer for 15 minutes with the lid on the pot. Blend the soup with an immersion blender. Add a splash of cream.

Croutons: Cut the bread into cubes, fry crispy in olive oil and butter. Season with salt and pepper. Place the croutons on kitchen paper.

Meatballs: Roll balls from the minced meat. Fry them in a chunk of butter.
