What do you need?

Quantity: 4P

4 large slices of sourdough or whole grain bread
8 slices of young organic cheese
1 container of yellow cherry tomatoes
400g mixed salad
2 ripe avocados
1 bunch of radishes
olive oil
salt and pepper

pesto:

150 g green olives
2 tbsp grated parmesan cheese
freshly ground pepper
juice and zest of 1 lemon
100 ml mild olive oil
1 bunch of flat-leaf parsley

Preparation method

How do you make this?

Put everything for the pesto in a food processor and blend until smooth, season with salt and pepper

Preheat the oven to 200°C

Spread the bread with the pesto, top with slices of cheese and tomato slices

Grill for about 5 minutes in the oven

Top with slices of radish, cubes of avocado, freshly ground pepper, a drizzle of olive oil, and serve with the salad

Kids version:

Cut circles out of the bread or use round rolls

Place 2 slices of cheese on top of each other

Cut the cheese into strips of 1 cm

Spread the bread or rolls with the pesto or optionally replace it with tomato sauce

Top with the cheese strips

Grill for about 5 minutes in the oven

Make eyes from the olives cut into slices

Serve with extra cucumber or tomatoes
