Kefta meat:
500g natural lamb mince
2 tbsp finely chopped fresh parsley
2 tbsp finely chopped coriander
1 tsp salt
0.5 tsp turmeric powder
0.5 tsp black pepper powder
1 tsp cumin powder
1 tsp ginger powder
0.5 tsp paprika powder

The sauce:
4 tbsp olive oil
4 large firm tomatoes
2 onions
4 cloves of garlic
0.5 bunch of coriander
0.5 bunch of parsley
1 tsp cinnamon
pinch of saffron powder
White pepper from the grinder
Salt
4 eggs
2 long chili peppers
Harissa to taste

4 eggs
2 long chili peppers

Preparation method

How do you make this?

Heat the olive oil in the tajine and add the onions. Let them become translucent.

Meanwhile, grate the tomatoes and add them along with the finely chopped garlic to the tajine. Stir in the cinnamon and saffron and let simmer for 30 minutes.

Mix all the ingredients for the kefta meat well together and form small balls. Place them in the sauce and ensure they are completely covered. Place the long chili peppers on top.

Cover the tajine and let it simmer for another 30 minutes.

Make 4 wells in the sauce and break an egg into each well. Let simmer for another 5 minutes until the egg whites are set.

Serve with Moroccan bread.
