20 soft brioche buns
20 large freshwater shrimp, peeled
300 g arugula and/or mustard greens
1 jar of fresh mayonnaise
2 kg ribeye at room temperature

Goat cheese-cilantro butter
150 g soft butter
100 g goat cheese
2 tbsp finely chopped cilantro
zest and juice of 1 lime
1 tsp chili powder
pinch of salt and pepper from the grinder

Preparation method

How do you make this?

Mix all the ingredients for the butter thoroughly and set aside.

Remove the shells from the shrimp, season them with salt and pepper, and drizzle with olive oil. Optionally, place them between a grill rack and grill them briefly on both sides.

Brush the meat with some olive oil, season with salt and pepper. Grill for about three minutes on each side, let rest for 5 minutes.

Heat some shrimp butter in a pan, arrange the grilled shrimp on top.

Slice the grilled meat into thin strips. Place the split buns on the grill for a moment. Spread mayonnaise on the bottom. Add the lettuce, meat, and shrimp on top.

Put the lid on, stick a toothpick through it, and serve.
