8 pita breads

2 tomatoes
1 romaine lettuce

Chicken gyros:
1 kg chicken thigh fillet (meat from chicken thighs without skin or bone)
1 lime
4 tbsp peanut oil
2 tbsp gyros spices or homemade

Gyros spice mix:
1 tbsp paprika
1 tbsp black pepper powder
1 tbsp dried oregano
1 tbsp cinnamon
1 tbsp garlic powder
1 tbsp cumin powder
0.5 tbsp chili powder
1 tbsp dried thyme
1 tbsp dried parsley
1 tsp fine salt

(2 tbsp peanut oil
Juice of 1 lime )

Tahini-yogurt-garlic sauce:
6 tbsp sesame paste (tahini)
2 tbsp yogurt
4 tbsp water
Juice of 2 limes
2 cloves of garlic grated

Tahini-yogurt-garlic sauce:
6 tbsp sesame paste (tahini)
2 tbsp yogurt
4 tbsp water
Juice of 2 limes
2 cloves of garlic grated

Preparation method

How do you make this?

Preheat your oven to 180°C.

Mix all the dry spices for the gyros spices together.

Put the chicken in a mixing bowl, add 2 tbsp homemade gyros spices, 2 tbsp peanut oil, and juice of 1 lime.

Mix the chicken with the marinade.

Cut the romaine lettuce into strips and the tomatoes into thin slices.

Heat a pan and add 2 tbsp peanut oil. Add the chicken when the pan is hot. Fry the chicken thigh fillets for about 5 minutes until golden brown on both sides and cooked through.

Mix all the ingredients for the sauce. Add water to achieve the desired thickness.

Remove the chicken from the pan and cut it into strips.

Place the pitas in the preheated oven at 180°C for 3-4 minutes.

Cut the pita breads in half, spread sauce on both sides.

Fill with lettuce, tomato, and chicken.

Finish with a dollop of sauce.

If you like it spicy, spread some harissa in the pita.
