What do you need?

Quantity: 6-8P

For the pears
4 to 6 firm pears, depending on size
1 bottle of white wine
1 cardamom pod
250 g light brown sugar
a melon baller
60 g butter at room temperature or plant-based butter
250 ml soy milk
150 ml soy cream
60 g flour
3 eggs, separated
a fireproof dish

For the finishing
zest of 0.5 lime

Tips
This preparation doesn't take long – the time for peeling the pears and mixing everything. Plus that half hour in the oven, of course.

If you use raw pears instead of poached ones, take 200 g sugar instead of 100 g.

You can perfectly prepare this dessert a day in advance, then serve it stress-free at the end of the dinner, and enjoy it yourself.

How do you make this?

The preparation for the pears
Peel the pears, cut them in half (leave the stem on!) and remove the core with a melon baller.

Bring the white wine with the cardamom pod and the brown sugar to a boil.

Add the pears, let boil for 3 minutes, and remove the pot from the heat.

Let the pears cool in the juice.

The preparation for the batter
Preheat the oven to 180 °C.

Combine all ingredients, except for the pears and the egg whites, and mix well until the flavors are blended.

Check for lumps and sift the batter if necessary.

Whip the egg whites until stiff and gently fold them in.

Pour the batter into the dish and arrange the pears on top.

Bake for 20 to 30 minutes and keep an eye on it: the top can sometimes get a bit too brown.

Remove from the oven and immediately sprinkle the zest of half a lime over it for even more aroma.

Serve cool.
