Ingredients

What do you need?

Quantity: 4P

Biscuit:
3 egg yolks
3 eggs
110 g fine sugar
3 egg whites
35 g flour
35 g cocoa powder (unsweetened)

Chocolate mousse:
340 ml heavy cream
3 egg yolks
45 g sugar
45 ml water
200 ml dark chocolate (min 70%)

Decoration:
100 g melted dark chocolate
Roasted hazelnuts coated in gold powder

Preparation method

How do you make this?

Soaking: Boil water, sugar, and scraped vanilla pod with seeds for about 5 minutes. Let it cool and remove the vanilla pod.

Melt the chocolate chips in a bain-marie or in the microwave. In the microwave, stir well every 30 seconds, as chocolate burns quickly!

Take a baking paper and pour the melted chocolate onto it, spreading it very thin and evenly on the sheet.

Roll it up and let it set in the fridge for at least 1 hour.
