What do you need?
For the dough
1 vanilla pod
50 g sugar
125 g flour
100 g butter at room temperature
a pinch of salt
1 egg yolk
a round or square springform of
at least 10 cm high
For the filling
200 g cream cheese or mascarpone
600 g (low-fat) cottage cheese
60 ml cream or sour cream
200 g brown sugar
20 g flour
zest of 1 lime
zest of 1 orange
the juice of 1 lemon
5 eggs and 1 egg yolk
For the finishing
400 to 500 g thick cottage cheese (like basket cheese) or a mixture of cottage cheese and cream cheese or mascarpone
optionally: a piping bag
Tip
The recipe is really very simple and quick to make, but the dough does need to be pre-baked first. After that, the cheesecake needs another hour and a quarter in the oven. It’s just a matter of patience.
